Microwave Vegetable Soup |
 |
Ingredients: |
 |
|
- 1 tbsp. olive oil
- 1 med. onion, cut into quarters and thinly sliced.
- 4 med. ripe tomatoes, chopped into fourths.
- 4 small carrots, peeled and cut into thin rounds.
- 2 ribs celery, trimmed and cut into thin rounds.
- 1 lg. bay leaf
- 1 tsp. salt
- 1/4 tsp. black pepper
- 4 cups water

| Cutting board, knife, large microwave safe bowl |

Directions to prepare: |
 |
|
- Place the oil and onion in a large bowl
- microwave, uncovered, on high for 3 minutes, or until wilted.
- add tomatoes, cover the bowl, and microwave on High for 10 minutes.
- Add the remaining ingridients, cover and microwave on high for 20 minutes, or until the carrots and celery are tender.
- Remove the bay leaf
- Serve immediately. Makes 3-4 servings.
